The top part was full of flavor and tender but not too tender. Even though it looks juicy in the picture it was just OK. Now on the other hand the rib meat below the fat vein was some of the best beef I ever cooked. Great texture, super juicy and full of flavor. I’ve removed the top part of the other two ribs and have frozen them for later use.

I am planning on doing some big beef ribs on the smoker for the Game of Thrones premiere. I have a couple questions and hope you guys can help. 1. I am having a very difficult time finding the big plate ribs online. I may be able to get some from my butcher but I think for the most part they get sent to restaurants.

2021年2月12日 · Porter Road also sells 123A with their monster Dino Ribs. Regardless of the source, I still prefer the 130 chuck cut and here's why. Due to the anatomy of the cow, ribs 5-7 (which is the 123A region) generally have a large fat cap and as you get into the seventh rib the fat is predominant over the meat. Beyond that the fat content is unacceptable.

Boneless "Country Style" Beef Ribs? - Pitmaster Club
Smoked the ribs for a few hours. Seared in sautee pan, removed ribs and mixed in a concoction of sauces, vinegar, garlic etc. to taste. Then decided to add a couple of cups of beef broth, which I made from "Better Than Broth". Then I put the ribs back in and simmered them for a few hours.

The plates have more meat on them but are, in my experience, difficult to impossible to find anywhere.
