Try the on screen keyboard. You can enable a standard keyboard layout in settings>devices>Typing. Switch to standard keyboard with cogwheel when normal touch keyboard pops up. If you set it up as US International, there should be an AltGr which toggle a bunch of foreign characters including ø.

Back in early 2022 I created or activate a way to insert a degree sign, °, by typing 3 periods. This works in OneNote, Excel, Outlook and Word. It may work in some other Microsoft programs but it doesn't work in Chrome or Edge.

If you're using the touch keyboard, Palaudog suggestion above is good. If you absolutely want to use the Type Cover keyboard, use the "RIGHT-ALT/SHIFT/+" key combination to get the "÷" character.
